Heroin Chicken (Tenders)

Heroin Chicken Tenders

There are several recipes out there called "Crack Chicken". This is not those. This one has different but also dangerous addictive tendencies, so to differentiate, we agreed to call this one "Heroin Chicken." Quick, easy, tasty AF.

Cook Time 30 minutes

Equipment

  • 1 Large baking sheet
  • 1 Baking rack

Ingredients
  

  • 1.5 lbs Chicken breasts (Pounded uniform – 1/2" is ideal)
  • 3/4 cup Mayonnaise
  • 3/4 cup Grated parmesan
  • 1.5 tbsp Dried parsley
  • 3/4 tbsp Dried oregano
  • 3/4 tbsp Paprika
  • 3/4 tsp Garlic powder
  • 3/4 tsp Salt (if brining chicken, do NOT use salt in seasoning)
  • 1/2 tsp Black pepper

Instructions
 

  • Preheat oven to 350°. Pound chicken down to 1/2" and slice tenders, against the grain, ideally to 1"x3" pieces. Try to keep uniform. If brining chicken, skip the preheat and give yourself an extra 30 minutes for fridge brine time. (Refer to my rant on brining here)
  • Assemble all the dry spices in a large bowl or a freezer bag. Coat tenders in mayo, then toss to coat in the seasoning mix. (If you brined the chicken, omit the salt from the spice mix)
  • Coat a baking sheet with foil, and space tenders out evenly. Bake for 20-30 minutes, flipping halfway through. Make sure internal temp is at least 165°
  • Serve with whatever the hell you want. Ranch, honey mustard, some mac and cheese, hell, throw a vegetable in there too please.

Notes

The over spicing in this is what makes it addicting.  Feel free to adjust your levels based on preference.  You may also consider another binder as opposed to the mayonnaise.  I have used melted butter, olive oil, or you could use a couple whisked eggs if you like.
